June 21: “First Annual NACE/Great America Chili Cook-off”, at California’s Great America

Click on their names to see candid photos courtesy of Jennifer Dahlen and Robbie Schlosser.

What a unique facility for our First Annual Chili Cook-off! Everyone enjoyed a spectacular afternoon! Fabulous chili — from blazing hot to sweet and mild — prepared by six teams of experts, with free samples enjoyed by hundreds of attendees, who voted for their favorites! Official judges also voted for the top three competitors. A fascinating show of vintage and “souped-up” autos added to the fun, as did the rock n roll band and all the exciting rides at Great America. Overall, it was a very successful event to showcase the culinary and organizational talents of members of Silicon Valley NACE, and to spearhead our fundraising effort to help the Mission College Hospitality Program. This special event replaced our usual monthly dinner meeting for June.

We began the day donning our blue “NACE” tee-shirts and helping direct our attendees to the Pavillion.  NACE volunteers included Jennifer Dahlen (Aramark, Santa Clara Convention Center), Mel Gilman (Mel’s Events by George), Amy Blach (AMB Designs), Robbie and Bunch Schlosser (Magnolia Jazz Band), Greg Casella (Catered Too), Barbara Schroeder, Naomi Kundin (Naomi’s Chocolate Catering), Claudia Akers (Claudia Akers Photography), and Linda Kinsella (Screenbooth).

The six teams of cooks included Aramark/Santa Clara Convention Center (),

Catered Too (Ross Berggren, Rigoberto Ambriz, and David Brissenden)
“We all had a great time, some of the secrets were of course the fact that we used a ‘chili cut” on our meat, not just a ground beef, and also we used Free Range-Organic Wild Boar and Venison meats. This was to bring a robust taste to the chili. Next I had caramelized the onions and peppers with the BBQ sauce to bring out an almost maple sweetness right before the fire Kick came into play. Using an assortment of Chipotle Chilies, Cayenne, Red Pepper Flakes and BBQ seasonings I was able to create a hot, but not painful spice that ended the chili with a bang!”,

Events of Excellence Catering & Events (Diane Eisenhauer, Dustin Eisenhauer, and )
"I'm a midwest girl, and this is Mama's recipe.  Just your basic chili ingredients:  ground beef, tomatoes, beans, onions, peppers, and spices — all cooked carefully and very S L O W L Y."  I layer my cooking, ex. vegetables chopped & cooked together adding my spices, chili pepper, cayene or pepper flakes,  fry off the ground beef and add  spices.  Then I begin to marry the foods cooking slowly.  Adding medium to fine chopped tomatoes, letting it stew slowly, adding beans to the pot – usually chili beans and kidney and spice it up at the end if needed.,

Great America (Kyla Lentz, Stephanie Fryer, and Ryan Davies)
“The recipe is a family recipe. It is not your hot spicy chili but more of a sweet comfort food that tastes great on cold nights or on game day.”,

Hyatt Regency Santa Clara (chef Joe Farinacci, Erik Tom, and Allison Shrope
“The Chili we made was a Traditional Mid-West style chili make with Grilled Buffalo Steak and Smoked Prime Bacon.  It was a tomato based chili infused with 2 types of chili powders and dried herbs.”, and

Mission College Hospitality Program (instructor Haze Dennis, and students Russ Mancillas and Marianna Larzabal)
“As for our chili, we simply seasoned and flavored each component, added them together in a sequence to maximize flavor blending, texture and that final spicy kick.  The final product simmered for only 30-40 minutes, but that seemed to be enough. There was one "secret" ingredient if you will, but other than that I would say that our chili contained basic traditional chili ingredients: ground beef, cut and seasoned sirloin, onions, tomatoes and beans.  We also included a very rich (reduced) beef stock which might have made a significant contribution.  I do not see beef stock in many chili recipes.”

At 10:00am, with encouragement from President Jennifer Dahlen, all the “culinarians” were already hard at work.  Cooking was completed by 1:30pm, and the judges went to work.  By 1:45pm, each team set up their “serving table” outside the Pavillion, and hundreds of attendees proceeded to sample each of the six versions of chili and leave a ticket to vote for their favorite.  Because each team had prepared three gallons of chili, most people wound up enjoying many “tastes” in the process of discussing their choices and deciding their favorite.

By 2:30pm, the voting was completed and everyone gathered at the bandstand, for awarding the prizes.  The “Team Spirit” award went to Hyatt Regency Santa Clara.  The “People’s Favorite” award went to Catered Too.  The judges awarded Third, Second and First prizes to Events of Excellence Catering & Events, Aramark/Santa Clara Convention Center, and Mission College Hospitality Program.

Afterward we returned to polish off the last of the chili, congratulate all the participants, admire the auto show, and perhaps catch one last ride on the merry-go-round.

Next month we’ll return to our regular dinner meeting format of networking with cocktails, appetizers, entertainment, an outstanding dinner, an educational program, an affiliate presentation, and raffle prizes.  July’s meeting is our annual “Dine-Around”, this year at several fabulous new restaurants on Mountain View’s Castro Street.
